Nectarine Melba Overnight Oats

This is my new favourite breakfast or evening snack 😋😍.

Ingredients:
✅️3 tbsp Traditional Greek yoghurt (full fat) for probiotics
✅️a handful of raspberries for antioxidants and fibre
✅️1 nectarine for vitamins and fibre
✅️3 tbsp jumbo rolled oats for avenanthramides and beta-glucan
✅️1 tbsp chia seeds for omega-3 fatty acids (in the form of ALA) and fibre

💡Fun fact: Oats contain polyphenols called avenanthramides, which are anti-inflammatory and stimulate the production of nitric oxide, which helps dilate blood vessels and support healthy blood flow—including to the brain🧠

I like to make overnight oats between 20 mins to 2 hours before eating; the shorter prep time is a tip suggested by Gordon Ramsay in his Bircher muesli recipe- check out his technique!👨‍🍳

To sweeten this without added sugars, you can add vanilla extract or vanilla seeds.

Nutrition Tip: Whether you choose full-fat or 0% fat Greek yoghurt depends on your individual health goals. If you are managing high cholesterol and monitoring your daily saturated fat intake, 0% fat Greek yoghurt is a lower-saturated-fat choice. Alternatively, if you are managing diabetes or insulin resistance, full-fat Greek yoghurt provides additional fat to help slow gastric emptying and stabilise blood sugar responses- find out more about dairy and diabetes here.

How do you enjoy your overnight oats?
